Why I love induction cooking?

But I have my own personal reasons for using induction cooking. I used to cook on gas burners (I still do for Chinese dishes). One thing I hated about them is they spread heat. Long cooking hours used to fry not only chicken but also me, my kitchen got easily heated up and I had to suffer through it to make a tasty dish. With induction cooktops there is no such problem. Most of them are 80% efficient, the heat required for cooking is produced inside the cookware so no wasted heat is released outside. Whereas my gas cooktop wasted 60% of the heat it produced (they are only 40% efficient). So the result? A more comfortable cooking experience.
My next best reason? Faster cooking. Induction cooking takes only a fraction of the time spent with gas cooking. It can boil water in minutes. I spent lots of my time in the kitchen so cooking any faster saves me a lot of time.
Induction cooktops are way much easier to use than any other kind. They have temperature and pre-set power levels which comes in handy. They are lightweight and portable. I love that I can take my cooktop for camping. When it comes to cleaning they are the best. I still remember my old days of cleaning my gas cooktop, it has lots of tiny parts where food particles hide to escape from my cleaning, I had to take each part, clean them and then reassemble the whole thing. A few months of use and my shiny gas cooktop had scratched all over it. My induction cooktop has touch controls, so it doesn’t have any holes or projections for the food particles to hide. It is totally flat and the top is made of high quality ceramic glass. The good thing about ceramic glass tops when compared to stainless steel is that boil-offs or food particles do not stick on them, a swipe with a damp cloth is mostly enough to clean them.
Most induction cooktops come with built-in timers. They are very convenient when using two cooktops simultaneously, I can set it on timer and then use my gas burners without paying any attention to the former. For the latter I have to constantly monitor it or else the food will be overcooked.

Guidelines to choose the best induction cooktop
The use of induction cooktops have been increasing in everybody’s household. Some may use it for home cooking purposes, while others consider induction cooktops the best source of cooking for commercial purposes. The immense efficiency these cooktops offers, along with safety features makes it suitable for cooking for dummies as well. If you have planned to switch from conventional cooking platforms like electric and gas cooking to induction cooking, there are some important factors that have to be looked upon before buying a brand. These factors are listed below.
Induction cooktops are known for their high efficiency. Most of them employ different heat modes settings to control the amount of power spent on cooking. Most of them have a power range of 500-1800W. As cooking methods vary for different dishes these various heat modes help to reduce energy expenditure. If you are someone who enjoy cooking choose the cooktop with more heat modes.
Number of cooking zones
The number of cooking zones vary from 1 to 5. It is up to you to decide how many burners are needed. Generally single burner cooktops are good enough for singles but if you are a busy working mom with kids go for three or more. More cooking zones also mean a larger cooktop, a 5 burner induction cooktop can be as big as 36 inches so if size is a constraint choose wisely.
The maximum size of the cookware you can use on an induction cooktop equals to the maximum diameter of the cooking zone. If the cookware exceeds that size then cooking will not be even. The usual size range is 6” to 13”. A combination of different sizes may be found in multi-heating elements. The common sizes used are 6”, 8”, 9”, 11” and 13”.
You can set different temperature settings on an induction cooktop, mostly the temperature range is between 100 to 650 degrees F with increments of 10 degrees to 50 degrees. These values vary depending on the cooktop brand. Brands like Max Burton offer temperature increments of 25 degrees while Nuwave precision has 10 degree increments. Temperatures near 650 degrees F are mostly available in costly induction cooktops with more than 3 burners.
How much does an induction cooktop cost? It varies from 50 bucks to $5000! More features mean more money, so choose only those features you need. As a general guideline you can get a good single burner cooktop for around $100, a double burner for around $400, a triple burner for $650, a four burner cooktop for $1300 and a 5 burner will cost you more than 2.5k (and they have premium versions too!)
The control panel is another important section of an induction cooktop to be considered in your buying decision. All the important settings are present in the form of buttons or easy touch electronic sensors. The type of control panel depends on the cost of the product. Through the control panel the power setting, temperature setting, timer setting and display can be accessed.
All induction cooktop have the timer setting. But the time range the user can set shall vary from a minimum of 1 minute to a maximum of a few hours. Each cooktop has different ranges depending on the brand policy. For cooktops with more than one heating element, the timer may either be common for all, or separate for each knob. This will depend on the initial price of the cooktop and the brand used. Also, some timers may have increments of 5 minutes, whereas some will have increments of 10 minutes. For precision cooking, timing is very important, and such a factor must be duly noted before selecting the cooktop. One important thing to note is that some cooktops switch off automatically after a specific time period, even if you don’t set a timer. This can be a headache if you are cooking broth or any similar dishes which require 8 or more hours.
Automatic Shut-off Safety Feature
This safety feature is seen on most induction cooktop models. Whenever the cookware spills due to over boiling (due to the user’s ignorance) or if more heat is spread on the cooktop surface, the device automatically detects this temperature change and shuts down the device. This safety feature ensures that the cooktop surface will always be touch friendly. It also saves a lot of energy and time. Some cooktops are also programmed to make alarm sounds to alert the user.
Automatic Pan Detection
If a meal is being cooked and the pan is removed from the cooktop surface, the device senses the absence of an induction compatible cookware and automatically shuts down the device to save energy and time. The time needed for recognition of utensil depends on each brand and their technology used. Some cooktops have a minimal time of 30 seconds while others wait for almost 45 seconds before turning it off.
Child Safety Lock/Control Lock Safety Feature
The child lock safety feature is provided to protect the induction cooktop against dangerous uninvited activation. All the control buttons will be locked after this feature is activated. Thus, no settings can be accidentally changed in between cooking.
Keep Warm Function
This function is used to keep a constant temperature on the cookware to keep the dish warm at all time.
The power boost feature is used in cases where faster cooking is needed. This feature is mostly available in multi-burners. The one disadvantage of this feature is that extra wattage will be consumed which may add up to the electricity bills.
Sync Burner Compatible
Some induction cooktop with more than 2 burners provide options to use huge griddles or grills for cooking. Stainless steel clad aluminium griddles are long pans that can be used for cooking hamburgers, sausages, fried eggs, sandwiches and so on. For these long pans to get enough heat, 2 burners which are nearby are made to act as a single element. For adding this feature, the burners to be synced are made of the same size.
Overvoltage and Low Voltage Sensor
All induction ranges have an overvoltage and low voltage sensor. When there is a huge fluctuation in the voltage feed, such that it could harm the device, it automatically shuts down to prevent further hazards.
Each brand will have their own size, shape, and parameters. The common ones must be closely reviewed to see if there is anything particularly great about the product.

Comparison between Gas Cooktops, Electric Cooktops and Induction Cooktops
When it comes to cooking food for a family, a group or a party, the right type of cooking apparatus and cooking style is important. There are wide ranges of cooking measures available in the market among which three types are the most commonly used. They are gas based cooking, electric cooking and induction cooking. Before going into points regarding which one is the best, it is important to know the basic working of these three cooking styles, and the cooktops used.
Gas Cooking includes a gas stove/cooktop along with a cylinder consisting of either of the fuel sources like propane, butane, liquefied petroleum or natural gas. The gas cooktop consists of burners which can be ignited using a small fire. A knob is present for each burner, which is used as On/Off switch to allow ignition and is also used to vary the intensity of fire. The utensil is placed on top of the burner and cooking is done.
Electric cooking can be done in two ways. One is with the help of electric ceramic radiant cooktops and the other is with the help of coil based cooktops. The former consists of coil metal elements or halogen lamps, which under the influence of electricity distributes heat from below through a tempered ceramic glass surface. The latter is not so complicated and uses a resistive coil to provide heat for cooking, as soon as electricity is passed through it. This heat is passed on to the utensil placed above it for cooking.
Induction Cooking is done with the help of an induction cooktop. The induction cooktop may look plain on the cooktop surface, but under it runs some metallic elements, which when passed on with an alternating current, oscillates back and forth through the elements. The surprising fact about this oscillator is that it creates an electromagnetic field on the cooktop, which does not harm human skin in any way. When the right utensil (the bottom of the utensil should be made of a metal that is induction compatible) is placed on top of the cookware, the electromagnetic field induces an electric current on the base of the cooking utensil. Thus, the electric current in the cookware produces heat on the utensil, with no heat present on the surface of the cooktop. The heat can be controlled on the utensil by controlling temperatures, wattage and timers. Multiple burner induction cooktops are also available which can be used for commercial purposes as well.
The kind of cooking style you choose not only depends on your lifestyle, but many other factors like safety features, cost and ease of installation, efficiency, cooking speed, cleaning time after cooking, travel compatibility, looks and many more aspects. All these parameters will be compared in detail between gas, electric and induction cooking.

1. Safety Features
When it comes to safety, the safest mode of cooking is surely by no doubt induction cooking. Since the cooktop does not generate any kind of heat, and with no flames generated, it is safe to touch and can be placed in places where children can reach for it. Most induction cooktops are also equipped with a child lock button. This feature helps in keeping children from accidentally turning on the device when no one is around. In the case of an electric stove, the heat will be present on the cooktop surface, which has to be handled with care. Gas stoves can cause high flames which can cause potential risks. The open flames can easily burn something or someone by accident. Moreover, there is also danger of gas leakage.
2. Cost and Ease of Installation
Costwise, using gas cooktops and induction cooktops are almost the same. Natural gas is cheap and easy to refill. The price of gas stoves are also affordable. Induction cooktops are also easy to buy, and electricity consumption is also not much. Compared to these two, the cost of electric coil cooktop installation is more.
Induction cooktops are the easiest to install, as they are lightweight and can be connected to a plug and turned on easily. Electric cooktops can also be used with the same ease. Gas cooking needs a connecting pipe between the gas stove and the cylinder. The cylinder will be quite heavy and will have to be handled with care.
Induction cooktops are very much efficient when compared to other cooktops, given that they are used at the right temperature and timing. Natural gas being cheap, can also be a great choice for cooking. But the heat transferred to the utensil can produce losses due to the uneven distribution of flames outside the utensil base. Since electric coils are slow to heat up they are relatively inefficient.
The easiest to repair among the three is the electric coil cooktop. Then comes the gas cooktop. The most difficult in repairing is the induction cooktop. Though they seldom get broken, most people try to exchange their broken induction cooktop for a new one.
5. Cooking Speed
Induction cookers are famous for their high cooking speed. They also require very little warm-up time. Electric coil cooktops are optimum for low temperature cooking and simmering. Gas cooktops are known for their instant heat and are also responsive to changes in temperature.
6. Ease in Cleaning
Induction cooktops are normally flat shaped and have a glass coating. Thus they are very easy to clean and the work can be initiated as soon as cooking is complete. Electric cooktops though have a flat surface, have a waiting period since the cooktop is hot and will have to dissipate before cleaning. Gas cooktops are the most difficult to clean, as they have a top holder above the burner and is comparatively bigger than the other cooktops.
7. Cookware Types
Any kind of metal utensils can be used for cooking on gas stoves and electric cooktops. But an induction cooktop requires induction compatible utensils, that is, utensils made of stainless steel, triple stainless steel or cast iron (ferrous cookware steel), which can be bought along with the cooking range. Nowadays, an interface disk is also available with the induction cooktop which is placed on the cooktop surface. The cookware to be used is kept on top of the interface disk for cooking. If so, any kind of utensils can be used, differing from stainless steel ones, iron clad utensils, glass materials, and so on.
8. Travel Compatibility
Induction cooktops are lightweight and available in sensible shapes. They can be plugged easily and the cooking process can be started in a few minutes. Induction cooktops are ideal to be used in recreational vehicles and also during road trips. Electric cooktops are a little more heavy and have to be handled with care. Gas cooktops are big in size,and always comes with a gas cylinder, which is quite heavy.
With all these points in mind it is up to you to choose a suitable cooktop. A combination of all the three cooking technologies can also be implemented instead of a single one.

What I don’t like about induction cooktops;
Yes that’s true. Everything has their pros and cons so do induction cooktops. They may be good at cooking your everyday meal but not that good for all dishes. Those which require flame cooking is a no go. I can use only flat bottom cookware but from my practical experience some dishes are tasty only when cooked in curved ones. Also induction cooking need induction cookware and they are costlier than the usual ones.
Do induction cooktops pose any health hazards? Generally no. But a study was conducted on their exposure limits and it shows that exposure values exceed for most cooktops at closer distance. This exposure may have bad effects if you are pregnant. So I don’t advice its use if you are pregnant.
